Low viscosity at high concentration is the unique property
Arabic gum reaches 30 percent solids while staying pumpable, which no other common hydrocolloid does. That is why it is the standard carrier for spray-dried flavours and the emulsifier for citrus cloud emulsions: it can hold a high payload without turning the syrup into a gel.
Film forming for confectionery
In panning, Arabic gum forms a glossy, hard film that seals the centre and takes colour evenly. Cheaper alternatives exist but do not give the same shine or the same resistance to cracking.
Typical Applications
- Spray-dried flavour encapsulation — As carrier at 20-40 percent of the emulsion solids, protecting volatiles during drying.
- Beverage cloud emulsions — Stabilises citrus oil droplets against ringing and separation in soft drinks.
Frequently Asked Questions
Spray dried or lump?
Spray dried for emulsions and encapsulation, since it dissolves fast and has consistent viscosity; lump for confectionery panning where clarity matters.
Why is supply volatile?
Acacia harvest depends on rainfall in the Sahel, and prices have swung widely. Qualify an alternative carrier for critical formulations.
Does it emulsify oil without other help?
Only weakly. It stabilises an emulsion formed by homogenisation but will not create one on simple mixing.
