Puts an oxygen scavenger into the fat phase
Ascorbic acid is water soluble and cannot protect oil directly. Esterifying it with palmitic acid makes it fat soluble, so it can scavenge oxygen inside the oil phase.
Synergist more than primary antioxidant
It is most effective combined with a primary antioxidant such as tocopherol, regenerating it after oxidation. Used alone at high dose it is less effective than the blend.
Typical Applications
- Frying and salad oils — 100-300 ppm with tocopherols for a clean-label antioxidant system.
- Fat-based flavours — 200-500 ppm to protect sensitive oils.
Frequently Asked Questions
Can it replace TBHQ in clean label?
Together with tocopherols it forms the standard clean-label system, though performance is lower.
Is it vitamin C?
It is an ester of ascorbic acid with limited vitamin activity.
How is it added?
Dissolve in the warm oil phase; it does not disperse in water.
