Lakes exist because water-soluble dyes bleed
In a fat-based or coating system, a water-soluble dye would migrate and blotch. Precipitating the dye onto an aluminium hydroxide substrate makes it insoluble, so it stays where it is dispersed.
Where lakes are preferred
Chewing gum, tablet coatings, chocolate panned goods and any application where colour must not bleed into an adjacent phase.
Typical Applications
- Chewing gum and coatings — 0.01-0.05 percent dispersed in the coating or gum base.
- Panned confectionery — 0.02-0.1 percent in the shellac or syrup layer.
Frequently Asked Questions
Lake or dye?
Lake for fat-based and coating systems; dye for aqueous products where clarity is wanted.
Does it contain aluminium?
Yes, which is why aluminium lakes have use limits in some markets.
How is it dispersed?
By high-shear mixing into the oil phase; poor dispersion shows as speckles.
