The most cost-effective antioxidant for frying oils
At 100-200 ppm TBHQ extends fryer oil life significantly, often doubling usable hours compared with untreated oil. It is dosed by weight of fat, not of food.
Carry-through and combination
TBHQ does not carry through into the fried product well, so it protects the oil rather than the food. Blends with BHA and citric acid as a synergist give broader protection.
Typical Applications
- Frying oils — 100-200 ppm to extend oil life and reduce polymerisation.
- Snack and fat-based products — 100-200 ppm on the fat content to retard rancidity.
Frequently Asked Questions
Why blend with BHA?
Different antioxidants act at different stages of oxidation; a blend is more effective than either alone.
Is there a use limit?
Usually 200 mg/kg on fat in most markets, alone or in combination.
Does it affect taste?
No at effective dosage; above 200 ppm a slight off-note appears.
